I love this watermelon salsa. It is fresh and colorful and goes with any type of meat.
With only two of us, a whole watermelon can be a challenge to get through. However, I found if I pre cut half of the watermelon into bite size pieces and store in glass containers, it is easy to enjoy either as is or in smoothies and juices. The other use the other half for watermelon salsa and watermelon salad.
It is such colorful side dishes and are very inviting for your eyes and taste buds.

Grow your own watermelon
If you like the concept of growing your own food, you should definitely try watermelon.
Watermelon is a great source of getting extra fluid in the hot summer months. To make it more fun, you can blend the water melon with some lemon or lime and make your own popsicles.
Every bite has a significant level of vitamin A, B6 and C. On top of that, it contains potassium, amino acids, and lots of lycopene, which is a phytonutrient, and plays a huge role in our cell health.
For this watermelon salsa you will need:
- 2 – 3 slice of watermelon cut in small squares
- 1/2 red onion diced
- 2-3 cloves of garlic, minced
- 1 huge bunch of fresh mint
- 1- 2 tbsp olive oil
- Ground pepper to your taste
Mix everything and store it in the fridge over night.
