Fresh Herb Mix – A Simple Way to Use Fresh Herbs From the Garden

There is something special about stepping outside and picking fresh herbs straight from the garden.

In early spring, herbs are often some of the first things that begin to grow again. After a slower winter season, they come back fresh, green, and full of life. Before long, you often have more than you know what to do with.

That is why this simple recipe works so well.

Here on the homestead, we use fresh herbs in one of the easiest ways possible—a fresh herb mix.

Nothing complicated. Instead, you only need a handful of herbs, a little good oil, and something acidic to bring it together. Because of that, it only takes a few minutes to make, and you can use it on almost anything.

For example, you can spoon it over potatoes, eggs, soups, or a simple salad.

Even though it is simple, it can completely change a meal.

Eating Fresh Herbs in Season

Fresh herbs are often overlooked. However, they are one of the easiest ways to add both flavor and nutrients to your food.

In the spring, herbs like parsley, chives, oregano, mint, and lemon balm begin to grow quickly. At the same time, they don’t require much space, and many of them come back year after year.

When you add fresh herbs to your meals, you naturally bring in:

  • More flavor without extra ingredients
  • More color to your plate
  • More nutrients in a very natural way

During this time of year, meals often become a little lighter. Because of that, fresh herbs fit perfectly into the season. They help balance heavier foods and bring a clean, fresh taste.

In addition, a simple herb mix like this makes it easier to keep meals interesting throughout the week. As a result, you don’t need to add extra work in the kitchen.

How to Grow Your Own Herbs

One of the best things about herbs is how easy they are to grow.

You don’t need a large garden. A few pots, a small raised bed, or even a sunny spot by the door is enough to get started with your herb garden.

Most herbs prefer a good amount of sunlight, well-drained soil and regular watering (not too much).

Some of the easiest herbs to grow, and my favorites, are chives, oregano, mint, thyme, lemon balm and parsley.

Once they are established, many herbs will continue to grow throughout the season, and some will come back year after year. Mint and lemon balm, for example, can spread quickly, so they are often best kept in their own space or container.

A Simple Way to Use More Herbs

One of the easiest ways to use more herbs is to prepare them ahead of time.

This fresh herb mix can be made in just a few minutes and stored in the fridge for a couple of days,
You can add it to:

  • Boiled or roasted potatoes
  • Eggs
  • Soups
  • Salads
  • Meat or fish
  • Simple grain bowls

It’s a small addition, yet it brings so much flavor, color and freshness to almost any meal.

Fresh Spring Herb Mix Recipe

This simple herb mix is easy to make and can be used as topping in many different dishes such as, scrambled eggs, grilled chicken andsoups.

Ingredients

  • 1 tbsp fresh parsley, chopped
  • 1 tbsp chives, chopped
  • 1 tsp oregano
  • Optional: a little mint or lemon balm
  • 2 tbsp olive oil
  • 1 tsp lemon juice or apple cider vinegar
  • Pinch of salt

Instructions

  1. Chop all herbs finely.
  2. Add them to a small bowl.
  3. Mix in olive oil, lemon juice (or vinegar), and salt.
  4. Let it sit for 5–10 minutes before serving, to bring out all the flavors.

How to Use

Spoon over warm potatoes, add to a salad, or use as a simple topping for eggs or soup.

Fresh herbs are one of the easiest ways to bring the garden into your kitchen.
