Pickled Red Onion

Flavorful and eye catching; pickled red onions are easy to make, and can be added to many different dishes because of the great taste.

Health benefits from red onions

Did you know that the onion, and especially red onion, is a healing plant with many useful properties?

Red onion contains vitamin C and several of the vitamins from the vitamin B group. You will also find both malic acid and citric acid, phosphorus, potassium, sodium, calcium, iron, iodine, sulphur, selenium and saponin, as well as essential oils.

Onions are a really good detoxifier, as the onion supports your liver function and helps remove toxins such as heavy metals, viruses, yeast and parasites from the body.
So get on board the Red Onions!

I have never cared much about pickled foods, but a few years ago it became very popular with pickled red onion, and I just had to try it. WOW – they are just SO good.

You can use them in a salad, on your burger or pizza, as garnish on any type of meat, soup and salad.
They are also perfect with sandwiches

You will need:

2 red onions
1.5 cup water
3.5 oz apple cider vinegar
3.5 oz sukrin, or other blood sugar neutral sugar
40 peppercorns
1 teaspoon good quality salt

Peel the onions, cut them in half before slicing them very thinly. Set them aside
Mix water, apple cider vinegar, sugar, peppercorns and salt in a small saucepan and bring to a boil.
Then add the onions and let it simmer for 2 minutes.
Distribute the onions and the liquid in Mason jars.

If you want to use the pickled onions the same day, let them cool for a few hours in the fridge first.

Your pickled red onions can be stored for a few weeks in the fridge – that is, if they last that long!
