Spring is a season of change.

The garden slowly wakes up, the days grow longer, and fresh vegetables begin to appear again after the slower winter months. At the same time, spring weather can still surprise us. One day it feels warm and bright, and the next day a cold wind moves through and reminds us that winter has not fully let go yet.

Those chilly spring days are exactly when a warm bowl of soup still feels perfect.

Even though we are moving into a lighter season with more fresh vegetables, a simple soup made from early spring crops can be both comforting and nourishing. One of the first vegetables to show up in many gardens is asparagus, and it happens to make one of the easiest seasonal soups you can make.

Here on the homestead, the asparagus was planted by the previous owner, so we were very excited to see them coming up this spring. The small shoots push up through the soil almost overnight, and before long they are ready to harvest.

A warm asparagus soup is a perfect way to celebrate that first harvest.

Eating With the Season

One of the simplest ways to support your body throughout the year is by eating with the seasons.

In winter we naturally eat more warming foods like soups, stews, and root vegetables. As spring arrives, fresh vegetables begin to appear again in the garden and at local markets.

At the same time, spring weather can still surprise us with cool evenings and the occasional cold spell. That’s when a warm soup made with fresh seasonal vegetables can feel especially comforting.

Asparagus is one of the earliest vegetables to appear in spring gardens.

It grows quickly once the soil begins to warm, and in many places it can be harvested for several weeks during the early part of the season.

Besides tasting fresh and slightly sweet, asparagus is also very nourishing.

Asparagus contains important nutrients such as:

  • Vitamin C
  • Fiber

It is also known for supporting kidney function and helping the body release excess water naturally.

One of the things I love most about this asparagus soup is how simple it is.

You only need a handful of ingredients, and the whole meal comes together quickly. The creamy coconut base gives the soup a smooth texture, while the asparagus adds freshness and flavor.

Adding ground chicken turns the soup into a complete meal with protein, making it both nourishing and satisfying without feeling heavy.

This type of meal fits perfectly with the spring season. The ingredients are light and fresh, but the warm bowl of soup still feels comforting when the weather cools down in the evening.

Harvesting asparagus from your own garden is one of those small spring joys that makes the start of the growing season feel extra special.

Easy Asparagus Soup Recipe

This creamy asparagus soup is simple to make and perfect for those cooler spring evenings when you still want something warm and nourishing.

Ingredients

  • 1 lb ground beef or chicken breast
  • 2½ cups chicken broth
  • 2 cans coconut cream (5.4 oz each)
  • Salt and pepper to taste
  • 2 bunches asparagus

Instructions

  1. Clean the asparagus and trim the tough ends.
  2. Cut off about half of the asparagus heads and set them aside for topping.
  3. Heat the chicken broth and coconut cream together in a pot. Season with salt and pepper to your taste.
  4. Add the remaining asparagus and let it cook for about 20 minutes until tender.
  5. Blend the soup until smooth.
  6. Pour the blended soup back into the pot and bring it to a quick boil.
  7. In a separate pan, cook the meat of your choice. Make sure it is fully cooked.
  8. Serve the soup topped with the meat of your choice and the reserved asparagus heads.

Simple seasonal ingredients, a nourishing broth, and fresh asparagus from the garden make this soup a wonderful meal for early spring.
