Harvesting asparagus from your own garden is one of those small spring joys that makes the start of the growing season feel extra special.
Easy Asparagus Soup Recipe
This creamy asparagus soup is simple to make and perfect for those cooler spring evenings when you still want something warm and nourishing.
Ingredients
- 1 lb ground beef or chicken breast
- 2½ cups chicken broth
- 2 cans coconut cream (5.4 oz each)
- Salt and pepper to taste
- 2 bunches asparagus
Instructions
- Clean the asparagus and trim the tough ends.
- Cut off about half of the asparagus heads and set them aside for topping.
- Heat the chicken broth and coconut cream together in a pot. Season with salt and pepper to your taste.
- Add the remaining asparagus and let it cook for about 20 minutes until tender.
- Blend the soup until smooth.
- Pour the blended soup back into the pot and bring it to a quick boil.
- In a separate pan, cook the meat of your choice. Make sure it is fully cooked.
