It’s apple season, friends – that wonderful time of year when crisp, juicy fruit fills the markets, and seasonal produce is at its best. Here on the homestead, we don’t have apple trees yet (though I’d love to plant some one day). For now, I pick up fresh organic apples from the grocery store, and every time I bring home a bag, it feels like I’m carrying fall right into my kitchen.

One of my favorite ways to use them is in this fresh, light appetizer: apple slices topped with tuna salad. It may sound like an unusual combination, but trust me – the sweet crunch of apple paired with the creamy, savory tuna salad is absolutely delicious. How to Make Apple & Tuna Bites

Ingredients (serves 4):

  • 2 large organic apples
  • 1 batch of tuna salad (see my tuna salad recipe here)
  • Fresh pomegranate seeds
  • A few mint leaves
  • Fresh lemon juice

Instructions:

  1. Slice your apples into 4–5 nice, thick rounds.
  2. Remove the core from each slice so you’re left with a neat circle.
  3. Brush the slices with lemon juice to keep them fresh and prevent browning.
  4. Place a mint leaf over the hole in each apple slice.
  5. Add a generous spoonful of tuna salad on top.
  6. Garnish with pomegranate seeds for a pop of color and sweetness.
