In a world where many of us eat too quickly, forget to chew, or consume mostly soft foods, this little habit can make a big difference in how you feel.

Chewing is the very first—and one of the most important—steps of digestion. When you chew thoroughly, saliva mixes with your food and releases digestive enzymes like amylase and lipase. These enzymes start breaking down carbohydrates and fats before your meal even reaches your stomach.

Chewing also signals your body that food is coming, stimulating gastric juices and helping your stomach and intestines do their job. If food isn’t properly chewed, it can lead to:

  • Bloating and gas
  • Heartburn or reflux
  • Constipation
  • Fatigue and low energy
  • Nutrient deficiencies

Slowing down to chew and truly notice the taste, smell, and texture of each bite is also a form of Mindful Eating. This breakfast crunch is more than just delicious—it’s a nutrient powerhouse packed with healthy fats, natural fiber, protein, and essential micronutrients to keep you energized and satisfied.

Nuts like almonds and pecans and seeds like pumpkin and sunflower provide insoluble fiber, which keeps your digestion moving and helps you feel full longer. Their healthy fats, including Omega-3 fatty acids (ALA) from seeds, support heart health, hormone balance, and brain function.

These crunchy ingredients are also abundant in:

  • Vitamin E, a powerful antioxidant that protects cells and supports skin, eyes, and immune health
  • Zinc, which aids in immune defense, hormone balance, and skin repair

Coconut oil, rich in medium-chain fatty acids (MCTs). These unique fats are quickly converted to energy, supporting metabolism, mental clarity, and steady energy levels without a sugar crash.

Together, this blend of healthy fats, fiber, and antioxidants transforms a simple breakfast topping into a powerful, nourishing start to your day.

What You’ll Need

When a recipe calls for syrup, I prefer using Sukrin’s Fiber Syrup. It’s a naturally-derived sweetener that won’t spike your blood sugar, making it a better option for sustained energy and blood sugar balance. You can use your favorite syrup, but make sure it is a pure syrup.

You’re can add fresh or dried fruit, but I recommend keeping the balance tipped toward fiber and healthy fats rather than sugar. I love fresh in season berries with my breakfast.
My Favorite Crunch also makes a great snack or dessert with a bowl of fresh fruit or berries (and a dollop of whipped cream)

You will need:

  • 2 ½ cups chopped almonds (about 12 oz / 350 g)
  • 2 ½ cups chopped pecans (about 12 oz / 350 g)
  • ½ cup pumpkin seeds (about 3 ½ oz / 100 g)
  • ½ cup sunflower seeds (about 3 ½ oz / 100 g)
  • 5–6 heaping tablespoons fiber syrup (or 4–5 tbsp raw honey if blood sugar isn’t a concern)
  • 3 tablespoons coconut oil
  • 1 tablespoon vanilla extract
  • 1 teaspoon Himalayan salt

How to Make It

  1. In a mixing bowl, combine the coconut oil, fiber syrup, and vanilla extract.
  2. Gradually stir in the oats, nuts, and seeds. I love mixing it by hand—your hands help melt the coconut oil slightly and ensure everything is well coated. Plus, there’s something grounding about making food with your hands.
  3. Spread the sticky mixture evenly over a parchment-lined baking sheet.
  4. Bake at 150°C (300°F) for 12–15 minutes. Every oven is different, so start checking around the 10-minute mark. You’re looking for a lovely golden hue—that’s when the crunch has reached its peak.
  5. Let it cool completely on the baking sheet. Once cooled, break it into clusters and store in an airtight glass jar in the fridge. It stays fresh for weeks (if it lasts that long!).
