- 2 ½ cups chopped pecans (about 12 oz / 350 g)
- ½ cup pumpkin seeds (about 3 ½ oz / 100 g)
- ½ cup sunflower seeds (about 3 ½ oz / 100 g)
- 5–6 heaping tablespoons fiber syrup (or 4–5 tbsp raw honey if blood sugar isn’t a concern)
- 3 tablespoons coconut oil
- 1 tablespoon vanilla extract
- 1 teaspoon Himalayan salt
How to Make It
- In a mixing bowl, combine the coconut oil, fiber syrup, and vanilla extract.
- Gradually stir in the oats, nuts, and seeds. I love mixing it by hand—your hands help melt the coconut oil slightly and ensure everything is well coated. Plus, there’s something grounding about making food with your hands.
- Spread the sticky mixture evenly over a parchment-lined baking sheet.
- Bake at 150°C (300°F) for 12–15 minutes. Every oven is different, so start checking around the 10-minute mark. You’re looking for a lovely golden hue—that’s when the crunch has reached its peak.
- Let it cool completely on the baking sheet. Once cooled, break it into clusters and store in an airtight glass jar in the fridge. It stays fresh for weeks (if it lasts that long!).
