Raw Apple Cake

Fall is apple time almost everywhere. Crisp air, shorter days, and baskets full of apples make it one of the best parts of the season. One of my favorite desserts to celebrate apple season is Raw Apple Cake. It’s easy, fresh, and perfect when you want something sweet without turning on the oven. I also love apples in my yoghurt for breakfast and in my Apple Kale Salad — they’re so versatile.

They say “an apple a day keeps the doctor away” — it’s an old proverb, but there is truth behind it. Apples are filled with nutrients that support overall health, making them a fruit worth enjoying often.

Why Apples Are Such a Great Fall Fruit

Apples have been connected with health benefits for centuries. The well-known phrase “An apple a day keeps the doctor away” first became popular in the 19th century, but even long before that, apples were valued in Europe for their ability to nourish and support well-being. And the truth is, apples really do bring valuable nutrients to the table. Paired with wholesome nuts and seeds, they make a dessert you can feel good about.

As one of the most common fruits in the world, apples are also one of the most powerful when it comes to nutrition. They bring more than just sweetness and crunch — they’re rich in:

  • Potassium – important for heart health, fluid balance, and steady energy.
  • B-vitamins – help with energy production and keeping the nervous system balanced.
  • Vitamin K – supports healthy bones and blood clotting.
  • Vitamin E – works as an antioxidant, protecting cells from stress.
  • Phytonutrients such as flavonoids and polyphenols – known for reducing inflammation and protecting long-term health.
  • Fiber – supports healthy digestion, balances blood sugar, and helps you feel satisfied.

Fall Apple Desert

For this Raw Apple Cake you’ll need:

4–6 large apples (choose crisp, juicy ones)
Juice of 1 lemon (to keep the apples from turning brown)
17 fl oz heavy cream, whipped (½ liter is about 17 fluid ounces)
2–3 cups of My Favorite Crunch

Instructions:

  1. Wash the apples. You can peel them if you prefer, or leave the skins on to keep extra nutrients.
  2. Shred the apples on a grater.
  3. Squeeze the juice of one lemon over the shredded apples and toss gently to prevent browning.
  4. Whip the heavy cream until soft peaks form.
  5. In a serving dish, layer: shredded apples → whipped cream → My Favorite Crunch. Repeat.
  6. Finish with a sprinkle of crunch on top.
  7. Serve immediately or chill until it’s time for dessert.

Tips & Variations

  • Mix apple varieties: Combine tart and sweet apples for a more balanced flavor.
  • Go dairy-free: Swap cream for whipped coconut cream.
  • Add spice: A touch of cinnamon or nutmeg makes it taste even more like fall.
  • Serve fancy: Try layering in small glasses for individual parfaits.
